Nestled inside the luxurious Regent Bali Canggu, Sazón is the newest dining gem bringing the vibrant flavors of Spain to one of Bali’s trendiest neighborhoods. This restaurant combines authentic Spanish traditions with modern culinary artistry, offering guests a taste of Barcelona and San Sebastián—without leaving the island.
From Ireland’s Kitchens to Bali’s Bold Flavors

Sazón is the brainchild of Chef Andrew Walsh, whose journey began in his brother’s kitchen in Ireland before he trained in Michelin-starred restaurants in New York and London. His passion for Spanish cuisine was ignited during his time at Singapore’s Esquina.
“I’ve been traveling to Bali for over a decade and always knew there was room for a truly great Spanish restaurant here,” Walsh shares. “Sazón reflects my journey, blending classic Spanish techniques with contemporary flair.”
Fire, Flavor, and Local Inspiration
At the heart of Sazón is an open charcoal grill, where fire infuses every dish with bold, smoky flavors. The menu highlights the diversity of Spanish cuisine while drawing inspiration from Bali’s own food culture.

Signature dishes include:
-
Squid-ink paella with a Balinese sambal matah twist
-
Wagyu bikini sandwiches with pickled peppers
-
Suckling pig roasted over Spanish charcoal, honoring both Spain’s cochinillo and Bali’s babi guling
“It’s about showcasing great ingredients in the best way. Simplicity and bold flavors always win,” Walsh explains.
More Than Just Dining

Sazón’s design creates spaces for every mood. Guests can enjoy tapas and sangria at the lively horseshoe-shaped bar, an elegant dinner in the main dining room, or a relaxed evening in the open-air courtyard.
Head Chef Javier Vicente, a Spanish native and paella expert recognized at the World Championship of Paella Valenciana, adds authentic expertise to the kitchen.
“We want guests to feel the warmth of a traditional Madrid tapas bar—blended with Bali’s unique charm,” says Walsh.
Rooted in Bali’s Culinary Community
Beyond serving exceptional food, Sazón also supports Bali’s growing culinary scene. The team sources fresh seafood, honey, and produce from local farmers and artisans, ensuring that the flavors of the island are part of every dish.
“With Sazón, we’re planting deep roots in Bali. This is the start of a culinary journey filled with fresh ideas and vibrant flavors,” Walsh enthuses.
